Description
Carotenoids are one of the largest groups of phytochemicals and produce many of the colours known to the natural world.
- The best known is probably the carotenoid beta-carotene, which was first detected in carrots.
- One carotenoid with powerful antioxidant abilities is responsible for the striking pink colour that several animals are known for, including some birds (flamingos), crustaceans (shrimp, lobster), and fish (salmon).
Astaxanthin is the king among red carotenoids.
- The richest source is a seaweed called Haema-tococcus pluvialis.
- Immediately after harvest, the algae is dried and ground into a fine powder.
